I bet you love scrambled eggs and cheese if you are reading this. I know I do. This cheesy egg breakfast recipe is straightforward to make and takes less than 5 minutes from start to serving. I mean, it really doesn’t get any better. Or wait, it does! The flavour is beyond delicious, thanks to the addition of your favourite cheese. I usually choose Mozzarella or Cheddar, but other cheeses you love will work too. I know eggs are made a lot for breakfast, but you can make these cheesy scrambled eggs as a snack too.

What You’ll Need

  • 2 eggs
  • 1/8 cup (60ml) milk
  • Salt & freshly ground pepper
  • 5g butter
  • Grated cheddar
  • Coriander

What To Do

In a bowl, whisk together the eggs using a fork. Don’t season with salt or pepper. Place a non-stick pan over medium-low heat. Add the butter, and let it melt.

Pour the eggs into the pan, increase the heat to medium and shake the pan a few times. After about 15 seconds, start pushing the rubber spatula from the sides of the pan to the centre of the pan, folding the eggs from time to time. This will take about 30 – 60 seconds.

Spread the shredded cheese over the eggs and continue to cook on low heat until the cheese melts and the eggs are creamy and soft. Gently fold from time to time, but as soon as the cheese melts, stop stirring and remove it from the heat. This should not take more than 20 seconds.

Season to taste with salt, coriander and pepper, and serve as soon as possible.
