Mother’s Day is literally in two days. What plans do you have to make your mother feel special despite the circumstances that we find ourselves in?
I was thinking of just how much I would have loved to spoil my mum, but well, I am far from her. So, unlike me, if you are close to your mother, I put together a few breakfast ideas that you could use to make her feel extra special.
Why don’t you whip up something for her and just let her know how special she is to you? This year, the way to her heart might just be through her stomach 😉
Here are some ideas I came up with. I have shared the ingredients to the suggestions. If you are interested, you may need to put in a little more work 🙂
Pineapple upside down cake
This one brings back memories from my childhood when my mother and I would always try out new recipes. We tried this and it became a hit!
Here’s what you will need: Softened butter, brown sugar, pineapple pieces, butter, caster sugar, self-raising flour, baking powder, vanilla extract (essence), eggs, pineapple syrup
I saw this when I was looking for ideas, and although I haven’t tried it yet, it is on my list. Not only is it easy and quick, it also has a message.
Show your mum how much you love her with this egg-in-a-hole by cutting a heart shape out of the bread.
You will need: mayonnaise, butter, bread, eggs, salt, black pepper, parsley/basil (whatever you prefer).
Caramelized onion twice-baked potatoes
I recently learned the reason that this dish is called twice baked is not only because it’s baked twice, but because it’s twice as nice!
Here’s what you will need: Irish potatoes, Chedar Cheese, Caramelized onions, Milk, Salt and Pepper.
I tasted this cake at a function I attended awhile back. I loved it and decided I was going to try and make it.
Enter…. Banana cake! If you are trying to give bananas to someone who doesn’t like them, try using this cake instead. It’ll work 😉
You will need: Self-raising flour, A pinch of salt, Margarine or Blue band….not blue band peanut butter, Sugar, Eggs, 4 ripe bananas, mashed, Milk

Banana & Almond Butter Pancakes
Who doesn’t love pancakes for breakfast? This is one of the easiest to whip up and serve your mama breakfast in bed.
Here’s what you need: Bananas, Almond Butter, Eggs, Honey (for serving)
I heard that citrus fruits are good just before meals, yes? Oh! Okay, maybe I heard my own things.
Anyway, why not try it out, it’s a good way to incorporate healthy, not only on Mother’s Day, but every day.
You will need: Red Grapefruits, Oranges, Lime, Blueberries, Pineapple
Sausage, Potato and Cheese Omelet
This is a good way to move from the omelet you mum used to make you when you were younger – or even now.
It is also filling!
Here’s what you need: Sausages, Onions, Irish potatoes, Black pepper, Eggs, Cheese, Milk.
