What better way to start this month than with good food?
This last quarter of the year, I have made it a habit to make fries at least once a week. To make it a meal I look forward to, I sometimes spice it up just a little.
This is exactly what we are going to do today!

What to do
Cut your potatoes into chips and fry them the way you normally do. Set them aside and allow them to drain on a paper towel. I love my fries a little brown and crunchy (something not many people do). This way, they are not too soggy as that will make them break during the next cooking process.
In a pan, add half of your coriander leaves (including the stalks) and let them fry lightly on medium heat. Add all the spices next and mix. When that is well mixed, add in your grated tomatoes and garlic.
Add a little bit of hot water and let this simmer on low heat for 5-7 minutes, so that all the flavors ‘gel.’ During the process, ensure the sauce does not become dry. In case it does, add in a little more water.
After the seven minutes are up, add your fries and mix everything all together. Allow this to cook for two minutes before you add in the remaining coriander leaves. Mix them in and serve!
