I told you that this year we are saying yes to more cooking. I wasn’t kidding because well, here we are again…one of the things I have managed to stick with so far.
Btw guys, on a different note, I am struggling to keep up with some of the things I wanted to do this year. Could it be that I have so much on my plate or am I just good at procrastinating?
Anyway….I tasted this cake at a function I attended awhile back. I loved it and decided I was going to try and make it.
Enter…. Banana cake! If you are trying to give bananas to someone who doesn’t like them, try using this cake instead. It’ll work 😉
You will need:
A pinch of salt
Margarine or Blue band….not blue band peanut butter
4 ripe bananas, mashed
What to do:
Preheat oven to 350 degrees. Grease and flour the baking pan.
In a bowl, whisk together the flour and salt.
In a different bowl, mix in the butter and sugar until light and fluffy. Beat in the eggs, one at a time. Mix in the bananas. Add the flour mixture alternating with the milk.
Mix until smooth. Pour the mixture into the baking pan.
Bake in the preheated oven for 30 minutes or until golden brown. You can also dip a fork into the cake and ensure it comes out clean. Remove from oven, and place on a damp tea towel to cool.
